Quartz vs. Quartzite vs. Granite: How to Pick the Right Countertop

Walk any slab yard in Dallas-Fort Worth and you will hear all three names in the first five minutes: quartz, quartzite, granite. They get shopped like three flavors of the same thing, and they are not. One is a factory-made product, two are natural rock, and the two natural ones behave very differently from each other under a hot pan, a lemon, and ten years of family life. Even the names conspire against you: quartz and quartzite sound like siblings, and the prettiest quartzite looks so much like marble that it routinely gets confused in the other direction too.

The good news, same as with tile, is that real answers exist. Geology says what each material is, manufacturers put their limits in writing, and there are two showroom tests anyone can run to catch a mislabeled slab before it is installed. Here is the whole picture, the way we walk clients through it on our DFW kitchen and bath remodels.

First, untangle the names

Granite is an igneous rock: magma that cooled slowly underground into a tight interlock of mostly quartz and feldspar with flecks of mica and other dark minerals. That crystal interlock is exactly what you see on the surface, the speckled, salt-and-pepper granular look that says granite from across the room. Quartzite is a metamorphic rock: sandstone that was buried, heated, and squeezed until its sand grains fused into a stone that is almost entirely the mineral quartz. It tends to come out looking like marble, white and light-gray fields with soft flowing veins, which is a big part of why people fall in love with it and a big part of why it gets mislabeled.

Engineered quartz (Caesarstone, Cambria, Silestone, MSI Q, and others) is not a rock at all; it is a manufactured slab of ground natural quartz bound with polymer resins and pigments. Classic formulas run up to 93-94% quartz by weight, and because it is made in a factory, the pattern is consistent slab to slab, from solid colors to convincing marble looks. Worth knowing in 2026: some brands have reformulated toward low-silica mineral surfaces (more on why in the quality section below), so the recipe varies by line, but the resin binder is the common thread, and that binder drives most of the rules that follow.

So when a showroom says quartz, ask which one they mean. The one-letter difference between quartz and quartzite is the difference between a product with a resin binder and a natural stone with none, and that difference decides the heat rules, the sealing rules, and the price.

Durability: two different ways to get hurt

Countertops take damage two ways, scratching and etching, and they are not the same thing. On scratching, the mineral quartz sits at 7 on the Mohs hardness scale, harder than glass and harder than a knife blade. Genuine quartzite is nearly all quartz, so it is effectively knife-proof. Granite, a mix of quartz and slightly softer feldspar, lands around 6-7, which in a kitchen means the same thing: very few everyday objects can scratch it. Engineered quartz is filled with the same hard mineral, so its surface resists scratching well too, though the resin between the grains is the softer ingredient and the reason manufacturers still tell you to use a cutting board.

Etching is chemical damage, and it is where impostors get exposed. Acids like lemon juice, vinegar, and wine react with carbonate minerals (the calcite and dolomite that make up marble, limestone, and travertine), leaving dull, lighter marks that no amount of polishing-in-place fixes. True quartzite simply does not etch from kitchen acids; the quartz it is made of is chemically inert to them. Granite is likewise a siliceous stone and does not etch in normal kitchen use. A stone sold as quartzite that etches is not quartzite, full stop, and that brings us to the trap.

The soft-quartzite trap: read this before you buy white stone

There is a category of stone the trade calls 'soft quartzite,' and the Natural Stone Institute is blunt about it: there is no such thing. In most cases the stone is marble. Two of the most famous examples sit in nearly every DFW slab yard. Super White is geologically a brecciated dolomitic marble (its quartz-filled fracture lines probably started the quartzite mislabel), and Fantasy Brown is made of interleaved layers, some marble, some quartzite, which means it has to be treated as marble because its weakest layer sets the rules. Dolomitic marbles are a touch harder than regular marble and etch a little slower, but they still etch, and buyers who were told they bought quartzite discover it with the first lemon.

Two tests settle it in the showroom, and we run both before a natural-stone slab gets our stamp. First, the glass-scratch test: a corner or offcut of real quartzite scratches glass easily; marble will not (test more than one spot on a layered stone like Fantasy Brown, since the layers differ). Second, the etch test: leave several fat drops of lemon juice or vinegar on the surface for 5-10 minutes, then wipe and look at a raking angle. Zero etching is the quartzite answer. Any dull spot means reactive carbonate minerals are present, whatever the label says. One more honesty note: stone varies quarry lot to quarry lot (Super White itself ranges from mostly dolomitic marble to, rarely, true quartzite), so test the actual slab you are buying, not a sample from a different bundle.

None of this makes marble a bad material; it makes it a mislabeled one. Plenty of our clients choose real marble with open eyes and love the patina. The trap is only ever paying quartzite money for marble behavior.

Heat: the clearest separation of the three

If you cook hard, this section is the whole article. The Natural Stone Institute says it plainly: granite will not melt or blister when exposed to heat, it is one of the most heat-resistant counters on the market, and a hot pan out of the oven will not harm it (they still suggest a trivet under prolonged-heat appliances like a slow cooker, and so do we). Quartzite, being pure natural quartz with no resin, is in the same camp.

Engineered quartz is a different story, by the manufacturers' own admission. Cambria's care guide requires trivets and hot pads and lists pots, pans, griddles, slow cookers, air fryers, and roaster ovens as things that should never sit directly on the surface. Caesarstone's and Silestone's warranties both exclude damage from excessive heat and thermal shock, and both instruct you to always use a trivet. The resin binder is the reason: industry guidance puts the danger zone around 300°F of sustained contact (roughly 150°C), and cookware straight off a burner or out of a 400°F oven is well past that. The damage is a scorch mark or a crack, and because the warranties exclude it, it is a permanent, uncovered mark on a premium surface.

Our honest read: a household that always uses trivets will never notice the difference. A household that slides pans out of the oven onto the island should be steered toward natural stone, and we say so in the design meeting.

Porosity, sealing, and stains

Here the ranking flips. Engineered quartz is nonporous and never gets sealed. Cambria states its product is nonporous and nonabsorbent, needs no sealing ever, and goes further: applying sealers or topical treatments is prohibited, because they just sit on the surface, wear unevenly, and dull the finish. For a busy family, wipe-and-done is a genuinely great property.

Granite and quartzite are natural stone, so porosity is real but wildly variable from stone to stone. Most granite arrives sealed by the fabricator, and modern penetrating sealers can last 10 years or more, so the old advice to reseal every year is outdated for most stones. The field check is the fabricator's water-drop test: leave a small puddle of water on the counter, and if the stone visibly darkens within a few minutes, it is time to reseal; if it beads and sits, you are fine. Quartzite runs the same spectrum by how completely the sandstone metamorphosed: dense varieties like Taj Mahal and Sea Pearl barely absorb anything, while more porous ones like White Macaubas genuinely benefit from a good sealer. The tell to watch is darkening around the sink, which means water is soaking in and the sealer is due.

Sealing is a ten-minute wipe-on job, not a renovation, but it is honest to say only one of these three materials asks nothing of you at all.

Cleaning: what daily life looks like

Day to day, all three clean the same way: warm water, mild dish soap, a soft cloth. The differences are in what you must avoid. On quartz, Cambria's do-not list is explicit: no bleach, no abrasive powders or scrub pads (Comet, Soft Scrub, S.O.S.), no oven cleaner, and no strongly alkaline or acidic cleaners, all of which can attack the resin. On granite and quartzite, the Natural Stone Institute's guidance is a neutral cleaner or stone soap; skip vinegar and lemon-based cleaners (acids are hard on sealers and etch calcareous stones outright) and skip scouring powders. Ammonia or diluted bleach is an occasional stain treatment at most, never a daily habit and never mixed together.

In practice we tell clients to buy one bottle of pH-neutral stone cleaner for natural stone, or just use dish soap on quartz, and to treat every miracle spray and disinfecting wipe with suspicion. The counters that look tired at year five are almost never worn out; they are cleaned wrong.

Outdoors and sunlight

Planning an outdoor kitchen or a counter near a west-facing window wall? Standard engineered quartz is out, and not because we say so: Caesarstone's residential warranty applies to interior installations only and excludes outdoor applications entirely (the company sells a separate outdoor-rated line for exactly this reason). Natural stone has no resin to degrade, and the Natural Stone Institute specifically endorses granite for outdoor kitchens, with practical notes we follow on DFW patios: honed finishes weather gracefully, use a penetrating sealer against food and leaf stains, and remember a dark stone in full Texas sun gets genuinely hot to the touch.

If your project is a covered patio kitchen or pool surround, granite (or a dense quartzite) is the default answer, and the quartz conversation ends at the door.

What they cost in 2025-2026

National cost guides published for 2025-2026 put the three in distinct bands, installed. Granite is the value entry among real stone: roughly $40-100 per square foot installed (Forbes Home), with most whole-kitchen projects landing around $2,000-4,500. Engineered quartz runs about $50-200 per square foot with a typical installed average near $125 (Bob Vila), and brand tiers inside that range: builder-grade lines in the $50-60s, premium designer colors near $100. Quartzite is the premium of the group at roughly $80-220 per square foot installed (Angi), commonly 30-50% more than a comparable granite, because the raw blocks are harder to quarry and cut.

Take every per-foot number as a band, not a promise: the slab you pick, the edge profile, cutouts, and how many seams your layout forces all move the total. That is why we quote countertops fixed, from your actual drawing and your actual slab choice, not from a per-foot chart.

Judging quality: slabs, brands, and the silica question

For natural stone, quality judgment is mostly about the specific slab, because no two are alike. View the full slab, not a sample chip; check the actual lot (stone varies bundle to bundle); run the scratch and etch tests from above on the slab you are reserving; and for a dramatic vein, ask how the fabricator plans to book-match it at the seams. A good fabricator welcomes all of this.

For engineered quartz, the product is consistent, so quality lives in the warranty fine print and the fabrication. Warranty terms differ more than people expect: Silestone carries a 25-year residential warranty that transfers to a new homeowner (manufacturing defects only, authorized installation required), while Caesarstone offers lifetime coverage to the original owner with certified fabrication and installation, dropping to a prorated 10-year term for a later buyer. Read what is excluded, because heat, thermal shock, and outdoor use are excluded everywhere, and those are exactly the failure modes people assume are covered.

One more thing a good contractor should tell you about: silica. Cutting engineered stone dry releases crystalline silica dust, and years of it gave fabrication workers silicosis at rates bad enough that Australia banned the manufacture, supply, and installation of engineered stone outright in July 2024. Two buyer-relevant facts follow. First, an installed countertop poses no risk to your household; safety regulators state plainly that engineered stone is safe once installed and undisturbed, and the hazard exists at the saw, not in your kitchen. Second, the industry is reformulating: Caesarstone's ICON line is made without crystalline silica, Silestone's current HybriQ formulations cut silica content to 10-40% from the old 90-plus, and we favor fabricators who cut wet with proper dust controls. It costs nothing extra to choose a shop that protects its people, and it is the kind of thing worth asking about.

So which one goes where?

The serious cook's kitchen wants natural stone: granite or true quartzite take hot cookware and acidic splatter without drama. Between the two, granite brings the classic speckle and the friendlier price; quartzite brings the marble look with none of marble's fragility, at the top of the budget. The busy-family, wipe-and-go kitchen is where engineered quartz earns its market share: nonporous, never sealed, consistent color, easiest daily care, with the trivet rule as the one commandment. A bathroom vanity is the lowest-stress home for any of the three (no hot pans, mild soaps), which is why this is the place to use the dramatic stone you fell in love with, or real marble if you want it.
